two weeks ago i decided to take the plunge and create my very own sourdough starter. its been a bit rough as the weather here has been sporadic and the heat and humidity really affected the starter.
i think im going to post pics of what im making now and then ill work backwards. Last night I decided to get creative and make tomato-sourdough bread, something i've been wanting to do for a while.
1/2 c sourdough starter
1/2 c tomato paste dissolved in 1/2 c warm water
1 tsp instant yeast
1/2 Tablespoon sugar
1 1/4 tsp salt
2 1/2 c flour
1/2 tsp each of basil, rosemary, and thyme
Combine all ingredients, and knead to form a smooth dough. Allow to rise until double in bulk (about 90 mins. Shape into an oval loaf, and allow to rise until puffy, about one hour. Preheat oven to 425, slash bread and spray with lukewarm water. Bake for 25-30 mins.
